High-Protein Boxed Brownies (with Truvani Plant Protein)

These are boxed brownies upgraded with a full scoop of Truvani plant protein while staying genuinely fudgy, not dry or chalky. The key is adding back moisture and richness (an extra egg plus yogurt or a little extra oil), then baking just until the center is set with thick, fudgy crumbs on a tester. Great for an easy weeknight bake, post-gym treat, or a crowd-pleasing dessert you can cut into smaller squares for better macros.

Ingredients

  • 1 box brownie mix (18–19 oz / 510–540 g; any brand)
  • Ingredients listed on the box (typically: eggs, oil, water)
  • 25–30 g (about 1 scoop) Truvani plant protein powder (vanilla or chocolate)
  • 1 large egg (in addition to the box directions)
  • 1/4 cup (60 g) plain yogurt, Greek or regular (I'm assuming you have yogurt—let me know if not and I'll swap it out)
  • Optional: 1/2 cup (85 g) chocolate chips or chopped chocolate
  • Optional: 1/2 tsp instant espresso powder (or use coffee as the water)
  • Optional: flaky salt, for finishing

Instructions

  1. Heat oven to the temperature on your brownie box (usually 325–350°F / 165–175°C). Grease or line an 8x8 or 9x13-inch pan (match whatever the box recommends).
  2. In a large bowl, whisk together the brownie mix and the Truvani protein powder until uniform (no protein clumps).
  3. Add the box-listed wet ingredients (eggs/oil/water) plus 1 extra egg and 1/4 cup yogurt. Stir with a spatula just until no dry pockets remain.
  4. If using, fold in chocolate chips/chopped chocolate.
  5. Spread batter evenly in the prepared pan.
  6. Bake until the edges look set and slightly pulled from the pan and the center looks set but still soft.
  7. Check with a toothpick: you want thick, fudgy crumbs (not wet batter, but also not clean). If it comes out clean, you’ve likely gone a bit far.
  8. Cool in the pan until just warm (at least 30 minutes) for cleaner slices and a fudgier set.
  9. Finish with a pinch of flaky salt if you like, then slice.

Notes

Moisture matters: plant protein absorbs liquid and can make boxed brownies dry/chalky. The extra egg plus yogurt keeps them fudgy and improves structure. If you don’t have yogurt: use 3 Tbsp (45 ml) milk/water/coffee plus 1 Tbsp (15 ml) extra oil. For extra chocolate flavor: replace the box’s water with strong coffee and add 1/2 tsp espresso powder. Storage: Keep airtight at room temp 2–3 days, or refrigerate up to 5 days (they’ll firm up). Warm 10–15 seconds in the microwave to get the fudgy texture back. Macros: Protein added depends on your Truvani flavor and scoop size; for best accuracy, divide total added protein by your number of cuts.
