Gluten-Free Miso–Tahini Drizzle (for Roasted Sweet Potato & Curried Beef)
This is a creamy, savory-sweet miso–tahini sauce with a little tang to cut through rich ground beef and the caramel sweetness of roasted sweet potatoes. It’s mild (no heat), fast to whisk together, and flexible: loosen it for drizzling, or keep it thicker as a dollop. Use certified gluten-free miso and tamari to keep it gluten-free, and finish with a touch of maple for a glossy, rounded flavor.

Yield: Makes about 3/4 cup (6–8 servings as a drizzle)
Ingredients
- 1/3 cup tahini (well-stirred)
- 1 1/2 Tbsp white miso (certified gluten-free)
- 1 Tbsp tamari (gluten-free)
- 1 1/2 Tbsp fresh lime juice (or lemon)
- 1 Tbsp maple syrup (or honey)
- 1 small clove garlic, microplaned or finely grated
- 1/4 tsp ground cumin (optional, nice with curry)
- 3–6 Tbsp warm water, to thin
- 1 tsp toasted sesame oil (optional, for aroma)
- Black pepper, to taste
- Pinch of salt only if needed (miso/tamari can be salty)
Instructions
- In a bowl, whisk together tahini, miso, tamari, lime juice, maple syrup, garlic, and (if using) cumin and sesame oil.
- Add warm water 1 tablespoon at a time, whisking until it turns smooth and glossy. Stop when it’s the consistency you want: thick like ranch for dolloping (about 3 Tbsp water) or thinner for drizzling (about 5–6 Tbsp).
- Taste and adjust: more lime for brightness, more maple for sweetness, or a splash more tamari for savoriness. Add black pepper. Only add salt if it tastes flat.
- Spoon or drizzle over roasted sweet potatoes and curried ground beef.
- Refrigerate in a sealed container up to 5 days. It will thicken when cold; whisk in a teaspoon or two of water to loosen.
Notes
Make it more “curry-friendly”: add 1/4 tsp turmeric or 1/2 tsp curry powder and a splash of water to thin. Make it extra punchy: stir in 1–2 tsp grated ginger. No lime/lemon: use 1 Tbsp rice vinegar. If using miso that isn’t labeled gluten-free, skip it and use 1–2 tsp fish sauce plus an extra 1/2 Tbsp tahini for body (taste for salt).
